The dish travelled to the Indian subcontinent with the Mughals, where it evolved dramatically.

Over centuries, every region created its own identity, from the rich Awadhi biryani of Lucknow to the fiery Hyderabadi version and the lighter Kolkata biryani, famously known for its potato.
